The bf shared that his office team went to a Lebanese restaurant for Friday’s lunch. And it reminded me of hummus and all the delicious middle-eastern food!
Mum and I somehow landed ourselves at Cold Storage the next day and I bought a packet of dried chickpeas!
I used this recipe from Taste.com.au – Classic Hummus from Super Food Ideas.
Ingredients
1 cup dried chickpeas
2 tablespoons tahini
1/4 cup lemon juice
1 garlic clove, crushed
1/4 cup olive oil
1/2 teaspoon sea salt
Paprika and extra-virgin olive oil, to serveMethod
Step 1
Place chickpeas in a bowl. Cover with cold water. Cover with plastic wrap. Stand overnight.
Step 2
Drain chickpeas. Place in a saucepan. Cover with cold water. Cover. Bring to the boil over medium-high heat. Reduce heat to low. Simmer, uncovered, for 20 to 25 minutes or until tender. Drain, reserving 1/2 cup liquid.
Step 3
Process chickpeas, tahini, lemon juice, garlic, oil, salt and reserved liquid until almost smooth.
Step 4
Spoon into a bowl. Sprinkle with paprika. Drizzle with oil. Serve.
Yep I soaked the dried chickpeas overnight and simmered them over low heat as per the recipe. Remember to keep the liquid! Don’t throw it away!
Tahini is a sesame paste and we got ours from Australia, courtesy of sis.
Olive oil!
I used Maggie Beer’s verjuice in place of lemon as I have a whole bottle of it!
Threw everything into the blender, including a clove of garlic, ready to go!
Et voila, c’est l’Hummus!
Blend to taste, adding more garlic/tahini/lemon juice as necessary.
Adjust the texture with a bit more olive oil or water if needed.
If you find it hard to blend, then there isn’t enough liquid!
